A characteristic (or histaminosis) is the intolerance of histamine that we ingest through food. Intolerance is caused by a lack of histamine-degrading enzymes diamine oxidase (DAO) and / or histamine N-methyltransferase (HNMT). This may also be due to a mismatch between histamine uptake and degradation in the body. This theory was developed in the 1980s as part of research into biogenic amines. [1]
According to some authors, histamine intolerance is not a congenital disease, but an acquired disease. It affects almost 1% of the European population. [2] [3] 80% of sick patients are middle-aged women. The symptoms of the disease may disappear during pregnancy, but will reappear after childbirth.
Controlled individual studies [4] [5] and a comprehensive meta-analysis from 2003 failed to find any scientific evidence of food intolerance to biogenic amines such as histamine. [6]
If there is histamine intolerance, it is not thought to occur as an allergy or as a non-immunological food intolerance, but as an enzyme degradation disorder. It can be a consequence of, or an associated disease of, other intolerances or allergies
